It was Mr Sow and Sew’s birthday yesterday – and where there are birthdays, there must be cake, even on the twelfth day of Christmas.
Mr S&S loves chocolate and especially loves cherries, so it is traditional that he has a chocolate and cherry cake for his birthday. This usually involves the best cherry jam I can lay hands on, but a while ago I saw some jars of sour cherries in syrup and snapped them up. I made a chocolate sponge, and sandwiched it together with a jar of the cherries, whole, and a bit of the icing with which I then smothered the cake. The icing, by the way, was a chocolate and sour cream icing and it is utter heaven. I did it on a whim as we had some tubs of creme fraiche in the fridge. Here’s the recipe:
Chocolate Sour Cream Icing (or Frosting)
75g unsalted butter
175g dark chocolate (I use 70% cocoa solids), broken into small pieces
300g icing sugar
1 tablespoon golden syrup
125ml sour cream
1 teaspoon vanilla extract
Melt the butter with the chocolate. I use a bowl in a pan of water because I cannot bring myself to melt chocolate in the microwave – too scared! Sift the icing sugar. Add the syrup, cream and vanilla to the chocolate and then mix that into the sugar. Add either sugar or water to get the consistency you need.
I decorated the cake with gold edible glitter (I bought the glitters to do my Christmas cake and am now moderately obsessed with them) and gold candles. So, who can tell me how old Mr S&S is?
